Breakfast Burritos

While at my Sister’s this past week, we had a craving for a Breakfast burrito from McDonald’s.. Instead, we ended up making some for dinner.. I’m not sure that we saved any money doing this, but it sure was tasty. This is ours with a twist!

We used;
- 10 (10 inch) flour tortillas
- 1 pound Bob Evans® Sausage Roll
- 1/2 cup diced red or green pepper
- 1/4 cup thinly sliced yellow onion
- 2 potato’s, diced
- 8 eggs, lightly beaten
- 1/2 cup grated Monterey Jack cheese & Cheddar cheese mixed
- Chipotle Ranch salad dressing

First cook the Pepper’s and onions and set them aside.

Next, crumble up the sausage and fry it. Set aside.

Then, fry up the potato’s until firm but tender.

Scramble the eggs and cook until almost done, then add in the potato’s, sausage, and pepper mix. Mix well and continue cooking until eggs are no longer wet.

Heat up the tortilla’s either in the oven wrapped in tin foil for about five minutes, or in the microwave with a damp paper towel for 30 seconds, or until hot.

Fill the tortilla’s with the egg mix, top with cheese and ranch, eat hot.

What is wonderful about these is you can really make them however you want. Switch the sausage out for bacon, ham, or steak. Add mushrooms, take away the peppers, add a different cheese, even make some pepper gravy to put on top or salsa instead! You can really make these your own! I hope I have given you enough idea’s to try something different, let me know how you make yours.
