I, personally, am not a fan of any kind of Seafood. But my Mom LOVES it. She would honestly eat it every day if I made it.. I decided to surprise her and make her this dish that my cousin (Tammy) posted on Facebook. She highly recommended it, so I went for it, and my Mom LOVED it, as I knew she would.. I have to admit, it was a very pretty dish! I had to improvise a little, we had no Red onion and the only lemon I had left I had to use for the juice, but I would reconment making it just like the recipe calls for, just because it would add some more color and make it prettier!
You will need,
-2 pounds cooked medium shrimp, peeled and deveined
-1 medium red onion, sliced and separated into rings
-2 medium lemons, cut into slices
-1 cup pitted ripe olives, drained (Greek or Black)
-1/2 cup olive oil
-1/3 cup minced fresh parsley
-3 tablespoons lemon juice
-3 tablespoons red wine vinegar
-1 garlic clove, minced
-1 bay leaf
-1 tablespoon minced fresh basil or 1 teaspoon dried basil
-1 teaspoon salt
-1 teaspoon ground mustard
-1/4 teaspoon pepper
Directions
First I rinse off the Shrimp, just to get a little of the fishy taste out. (FYI: Walmart Super-center has a bag of cooked & deveined shrimp for $5! can’t beat that!)
Next, I made the dressing in a glass bowl, Olive Oil, Parsley, lemon juice, vinegar, garlic, basil, salt, and dried mustard, and I whisked it together. Add in the Bay leaf last.
Next I cut up the onion, and added them and the olives to the dressing (this would be the time to add the lemon slices also.
Add in the Shrimp and coat them all, Put them in a bowl small enough that the dressing covers the shrimp as much as possible, don’t use a metal bowl, the shrimp will take on a metallic taste, try and use a glass bowl if possible.
Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before eating! My Mom ate her shrimp on a bed of lettuce with fresh mushrooms, tomato’s and cucumbers.
This is actually used as an appetizer, but you can use it basically as lunch or dinner, or a snack easily! Serve with crackers if just an appetizer.
