Last week, I promised to post a recipe for the easiest side dish ever. Seriously, guys, this is so easy to make but so amazingly delicious. That’s one of the best combinations, isn’t it?
As usual, I found this recipe on Pinterest. I hadn’t been on there for a while, and I recently went on a Pin Binge. I’ve mostly been looking at the ‘humor’ section, but I have also been checking out the recipes.
When I saw this recipe for Easy Cheesy Orzo, I knew I had to try it… and, you should, too! It’s soooo easy.
Cheesy Orzo
1 Cup Orzo Pasta
1 Cup Frozen Peas (Optional)
2 Cups Chicken Broth
1/2 Cup Shredded Cheddar
1/4 Cup Grated Parmesan
Salt and Pepper, To Taste
Combine orzo, peas, and broth in a stock pan. Bring to a boil, cover, and allow to simmer about 15 minutes. The orzo should be tender, and most of the liquid should be absorbed. You can add a few tablespoons of extra broth if you need to.
Remove pan from heat, and stir in the cheese, salt, and pepper.
Serve hot and enjoy!
See? Easy Peasy. This is very, very customizable, too. Switch up the cheese, add some different spices, substitute whatever vegetable for the peas, do whatever you feel like. I love recipes like that.

I love orzo, so I know I would love this dish. Will have to try it.
