Have you noticed yet that I love to try different cakes and brownies? I love to bake, and if I find something I’ve never seen before, I’m going to go for it! I was watching the show Chopped the other day on Food Network, because that is basically the channel that is on 24/7 in my house.. If I’m not watching it, my Mom is.. Anyway.. I watched a man make a rolled cake, and he made it seem so easy! I knew I had to try it. And guess what? It’s really not as hard as I thought it was going to be!!!
You will need;
-1/2 c. flour
-1/4 c. cocoa
-3/4 tsp. baking powder
-1/4 tsp. salt
-4 eggs, separated
-1 tbsp. cold water
-1/2 c. + 1/3 c. sugar
-1/2 tsp. vanilla
-1/3 c. powdered sugar
First, You are going to want to Grease and flour a jelly roll pan and Preheat oven to 350 degrees. Sift flour, baking powder, & salt in large mixing bowl.
Combine egg whites and water. Beat on high until frothy.
Gradually add 1/2 cup sugar and beat until stiff.
In small mixing bowl, beat egg yolks until thick. Gradually add 1/3 cup sugar. Add vanilla and beat 2 minutes longer.
Fold into egg whites. Fold in dry ingredients. Don’t over mix.
Add in cocoa and mix gently. (I did this last, instead of with the dry because it seems to mix better this way.. )
Spread batter evenly in pan. Bake 12 to 15 minutes. Coat dish towel with powdered sugar.
Turn cake onto towel.
Roll up cake and towel together. Let stand 1 minute. Unroll then re-roll.
Cool, unroll and spread with vanilla ice cream, whipped cream, chocolate whipped cream, or any other filling you like best. Even jams, preserves.. Fresh fruit! Be creative. I made a butterscotch filling with butterscotch pudding mix, a 1/4 cup of milk just to wet it, and then I folded in whipped cream.
After you spread the filling, Chill.
I then drizzled it with dark chocolate ganache just to make it a little more pretty.. It was yum!
