I haven’t made an appetizer in awhile, so I thought it was about time. It’s just my Mom and I at home, and some night I just don’t feel up to making a big dinner, so we opt out and make appetizers and a salad. This time we made yummy mini pizzas
You will need;
-Mini Pizza doughs, flat bagels, or English muffins
-Mozzarella cheese
-Pepperoni
-1 or 2 Vine ripened Tomatos, sliced thin
-2 tablespoons dried Basil
-2 tablespoons kosher salt
-Cracked black Pepper, to taste
-Fresh Baby Spinach
-1/4 cup olive oil
I used store bough mini pizza doughs, but I would really rather make them myself. I like them a little thinner than this, but it’s really up to your tastes. Spread the ‘dough’ out on a pan.
After slicing the tomatos thin, toss them in the kosher salt, Black Pepper, dried basil, and half of the olive oil.
Use the other half of the olive oil to spread on the dough, it helps to brown it and give it a little crunch. Place the tomato on them, as much as you like… I like less tomato, my Mom likes more.. So that is why it’s uneven.
Top with pepperoni
and lots of cheese
Bake for ten to fifteen minutes, or until the cheese is bubbly and golden brown around the edges.
I usually top these with fresh baby spinach to give it a little freshness.
This is also an awesome thing you can play with, to add what you like on them best. Change out the tomato for sauce, add veggies, more meat.. It would be something fun to do with kids! Let them make their own little pizzas!
