This is something great to make when you are feeling a little under the weather, or if it’s a cold, rainy, or just gloomy day! It’s infused with a lot of flavor to make you feel all warm and cozy inside!
You will need:
~8 cups Chicken Stock (Homemade or store bough)
~2 Large Chicken Breast, cooked and cut into bite size pieces
~Bag of frozen Vegetables, Thawed and cut up (I used Broccoli, Carrots, & Cauliflower blend)
~2 cups fresh spinach, chopped
~Noodles of your choice, two cups uncooked
~1 Tablespoon each of; Ground Ginger, Garlic powder, Onion Powder, Kosher salt, & ground sage
~1 teaspoon Black Pepper
First, you are going to want to get the Chicken stock boiling and add in all the seasoning and the cut up chicken. Turn down to medium/low and let simmer for about 30 minutes to infuse the seasoning into the broth and Chicken.
Next, add in the vegetables (all but the spinach) and the noodles, and cook about thirty minutes on Medium.

I used bow tie, but just a warning, they get huge as they absorb the broth, so try and use a small noodle!
Add in the spinach and cook for another fifteen to twenty minutes..
You can leave it on low to keep warm, basically all day.
Serve with Crackers, bread, or a salad!

There isn’t anything better than homemade chicken soup – it fixes anything! So comforting – I like that you changed up the classic with different vegetables, I’ll have to try that!

Soup is my favorite food group, and this sounds great. It’s got all the elements of a classic chicken noodle, but I’m super intrigued by your inclusion of ginger in the spices! I’ll have to give it a go!
I can’t wait for fall, then I can make more soups and chili’s!
So I’ve, unfortunately, come down with a cold… and, while I didn’t follow your recipe due to laziness, I did add in some ginger to my broth, and it was fabulous. I’d been concerned it would, you know, taste like ginger, but it didn’t. It just added that je ne sais quoi. Thanks for the tip, I feel better already
