When I was a kid, we’d have ham, green bean, and potato soup anytime we had leftover ham. I always looked forward to having this after Easter or any other holiday that involved a huge ham!
It was one of my favorite things! We always just called it ‘ham and green beans,’ but I feel like that name is insulting to the potatoes. They’re just as important in this dish than everything else!
Usually, my Grandmother would boil the ham bone to make broth. She also used canned green beans. My puppy had already made a snack of my ham bone by time I decided to make this, and I looooove fresh green beans. Besides, imagine how much sodium this would have with ham and canned vegetables! Yeah, no thank you.
Ham, Green Bean, and Potato Soup
1 lb Fresh Green Beans
1.5 lbs Potatoes
2 Cups Ham
4 Cups Chicken Broth
Add chicken broth to a large stock pan and heat to a boil.
Dice the ham and add it to broth.
Wash green beans and snap them into 1 inch pieces. Add to soup.
Wash, peel, and dice potatoes. Add to soup.
Cover and let simmer for 30 minutes, or until potatoes and green beans are done.
Enjoy.

Oh, the easiest ones are the best. 😀 Ham is alright on the first day, but ham related leftovers are the entire reason for cooking the darn thing.

I love ham in soups – particularly split pea… however, when I make it at home and it simmers for hours, I’m usually over it by the time it’s done and my house is all stinky. This sounds fab, and simple, and like it allows for less time for me to get sick of it 🙂
I’m not the ‘simmer for hours’ type of girl 😉 I have waaaay too short of an attention span for that! I mean, you could simmer this, but meeeh. Like you said, it allows less time to be sick of it!
I know! It’s one of those “such a shame” situations that you put all these hours into something and then want to puke at the sight and smell of it 😉
