Swedish Meatballs

I’m a huge fan of Skinny Taste. So, when I saw Gina’s recipe for Swedish Meatballs, I knew I had to try them.

As always, Gina did not disappoint.

Yes, I realize that these are NOT traditional Swedish Meatballs. They’re still delicious. Just give them a chance. My daughter LOOOOVES them.

I didn’t make many changes to this recipe. I only doubled the sauce and baked the meatballs. We like extra sauce in my house, and baking the meatballs makes sure the fat ends up in the baking pan, not the sauce.

Swedish Meatballs

1 lb Lean Ground Beef (Or Turkey)
1 Tbsp Minced Garlic
½ cup Minced Onion
2 Tbsp Dried Parsley
1 Large Egg
¼ Cup Breadcrumbs
½ tsp Allspice
Salt and Pepper, To Taste
4 Cups Fat Free, Reduced Sodium Beef Broth
4 oz Fat Free Cream Cheese

Mix together ground beef, garlic, onion, parsley, egg, breadcrumbs, allspice, salt, and pepper. Once combined, form meatballs. I used 2 Tablespoons per meatball, which is equivalent to about 1/8 cup. I ended up with 20 meatballs.

Place meatballs on baking sheet. Bake at 350F for about 30 minutes, or until meatballs are fully cooked.

While meatballs are baking, pour beef broth into a sauté pan and bring to a boil. Let simmer until broth reduces by about half. It should be done right around the time the meatballs are ready to come out of the oven.

Whisk the cream cheese into the broth until smooth.

Add meatballs to sauce. Let sit a few minutes to thicken. Enjoy.

I served mine over No Yolks Egg Noodles. I think mashed potatoes would be pretty awesome, too.

Best part? Each meatball with gravy is right around 50 calories. You could have five of them with about ½ cup of sauce for 250 calories!

    I really like the recipe! My grandma always made meatballs like these, but she used cream instead of cream cheese 🙂 I would say they are pretty traditional.. Try adding mustard.. It’s soo good 🙂

      mmm I love meatballs. I made normal spaghetti and meatballs the other day, but I put mozzarella cheese in them. OMG it was YUM!
