Creamy Cauliflower and Kielbasa

I’m always on the lookout for easy, delicious, low calorie recipes. I came across this recipe for creamy cauliflower and kielbasa from Nook & Pantry on Pinterest, and knew I had to make it. It just sounded too yummy to pass up!

So, I gave it a try, made a few little changes, and came up with this! There are never any leftovers in my house when I make it.

That’s OK though, because this makes four huge plateful servings with only 300 calories each. So, you can have a few extra bites without feeling too guilty.

Creamy Cauliflower and Kielbasa

13 oz Turkey Kielbasa
1 (16 oz) Bag Frozen Cauliflower
2 Cups Frozen Peas and Carrots
1 Can Cream of Mushroom Soup (I used Cream Of Anything Soup)
1 Cup Milk
¼ Cup Grated Parmesan Cheese
Salt and Pepper, To Taste

Cut the kielbasa into half circle, bite sized pieces, and brown in a large skillet. The kielbasa I bought came in a 13 ounce package. Some brands put a little more in their packages, and some put a little less. Whatever you pick out is fine. You could even use *gasp* regular kielbasa if you wanted. It might up the calorie count a bit, though.

Add the cauliflower and peas and carrots. I only added the peas and carrots because I thought this needed color. It definitely tasted delicious.

Let that cook while you combine the soup, milk, cheese, salt, and pepper. Pour the liquid mixture into the skillet and bring to a boil.

Let simmer for five minutes, or until the sauce thickens a bit. It’ll still be a little thin, but it’ll thicken while it cools. Enjoy.

My inspiration recipe used fresh cauliflower, but I had frozen on hand. If you want, you can use fresh. You’ll just have to cook it longer.

    Thank you, thank you, thank you! I have a bag of frozen cauliflower in my freezer that’s been there for months. No one wanted to eat it. Now I have a good excuse to use it up. Think I will use bratwurst (the sausage of choice at my house) instead of Kielbasa and make my own cheddar cream sauce. Thanks for the inspiration 🙂
